Cucumber-Mint Smoothies


Ingredients

  • 1 1/2 cups coarsely chopped fresh cauliflower
  • 1 1/2 cups cubed honeydew melon (1-inch cubes)
  • 1/2 of a medium cucumber, cut into 1-inch pieces (1 1/4 cups)
  • 1/2 cup water
  • 1/2 cup lightly packed fresh mint leaves
  • 2 tablespoons honey
  • 3/4 cup ice cubes

Directions

  1. In a small saucepan cook cauliflower, uncovered, in enough boiling water to cover 10 to 12 minutes or until very tender. Drain and rinse with cold water to cool quickly.
  2. In a blender combine cauliflower and the next five ingredients (through honey). Cover and blend until very smooth, stopping and scraping sides of blender as needed. Add ice cubes. Cover and blend until smooth.
  3. Pour into tall glasses. Serve immediately.
